A couple of months ago, I tasted possibly the best vegan pie ever. Vegan Coconut Cream Pie by Karyn's Cooked in Chicago. The crust is crunchy, the filling is creamy with the perfect amount of coconut flavor and the whipped cream on top...silky, fluffy, vanilla heaven.
My husband and I frequently stop by Karyn's Cooked for their pie. They also have Lemon Meringue, Chocolate Silk and Pecan Pie. They're all incredible, but my heart belongs to the coconut.
On a similar note, have you seen Isa Chandra Moskowitz + Terry Hope Romero's new cookbook solely devoted to vegan pie?!?!?!??!
