I recently had dinner with some friends at Fonda in Brooklyn. Along with some killer guacamole, they offer Vegetarian Enchiladas that can easily be vegan-ized.

Soft corn tortillas filled with diced potatoes, roasted eggplant, zucchinis and chayote, topped with a tomatillo serrano sauce, chopped cauliflower and cilantro. Ask for them sans queso fresco and crema.

That's awesome that they can veganise these! I love vegan Mexican cuisine! Definitely go to Mexico City and try some hibiscus vegan enchiladas if you ever go to Mexico!

So easy to veganize, just ask them to omit the cheese and crema. They were so good and perfect when eaten with their freshly made guac!

I would love to visit Mexico City!
