El Jefe is a great Mexican restaurant inside The Saguaro Hotel in Palm Springs.
They have a vegetarian taco on the menu, with roasted mushrooms, poblanos, onions (skip the queso blanco if you're vegan), however, I decided to make my own taco. I ordered a side of black beans (vegetarian), a side of pineapple habanero salsa and some tortillas. Paired with guacamole, it was exactly what I wanted. Simple and extremely flavorful.
